Blade Runner and the Dune games come to mind? Soldier of Fortune is in some interesting license issues I believe, as is MechWarrior.

Honestly though, 'unlikely' isn't even in GOG's vocab lately... unless you're talking Blizzard or Valve, especially Valve.
The +18 version of the Grisia trilogy. If I were to go completely beyond feasibility, Super Robot Taisen: Original Generations from the PS2 being ported and translated onto the PC.
Various Valve, EA, and Ubisoft games that will likely never leave their own DRM platforms would be cool.

As far as licensing hell goes, I would be amazed if GOG could ever get The Lord of the Rings: The Battle for Middle-earth II: The Rise of the Witch-king.

For me, the Blizzard stuff, but JKHSawyer has listed some pretty cool stuff there as well.
