I won't list what I could play specifically for 8 hours straight, as it would likely include any game that really captures my imagination.

I don't know if there's any game you should play for 8 hours straight.

Games I have played for 8 hours straight or more include:

Dragon Age:Origins
Baldur's Gate 1 and 2
Icewind Dale 1 and 2
Mass Effect
The Witcher 1 and 2

Might be a few others, but I think all of those I've played for an 8 hour or longer stint at one time or another.

None. None at all. It's actually bad for you. Take breaks.

If I'm feeling bad enough and need escape from reality, pretty much anything good that lasts at least that long.

Back when these gaming experiences were new: Betrayal at Krondor, Ultima VII, Diablo, Wing Commander games, particularly Privateer 2, Fallout, Fallout 2, Baldur's Gate 1/2, Planescape Torment, Icewind Dale 1/2, Arcanum, Freelancer, VtM: Bloodlines, and especially Civilizaiton II and Sid Meier's Alpha Centauri (with and without the expansion pack). All of these I had a least one 8-hour session at one time or other, back when my time was cheap and patience enduring.

I'd add Thief 1/2 to the list, except I only played those games at night, and well, four or five hours was typically the max so I'd get *some* sleep.

Nowadays I never game for that long. Usually just an hour or two, in spurts every few days, if that.

I played The Witcher 2 for 8 hrs or more, because I want to see Triss naked again and Geralt's way of 'bedding' women.
The list for me is too big, my most recent games would be

Mass Effect 2 (26 hours)
and Psychonauts (10 hours)
With most Civ games, it's a given that you'll end up playing 8 hours or more and not realize it!
To answer your three questions:
1. Deus Ex: it is too engrossing and I have to force myself to quit when I play it.
2. The Elder Scrolls II - Daggerfall: The only way to make progress in that game in my opinion is to play for eight hours.
3. None, I can't get myself to play a game for more than 2 or 3 hours ninety-five percent of the time. I have to get up and move around or do something else with my time.
Civ, Heroes of Might and Magic, Batman. Yeah.

Oh and Eador now, holy shit it is good.
