Vampires The Masquerade: Redemption (played with cheats all the way through...it was awesome, I don't regret it in the slightest lol)

Europa Universalis III (with mods).
Most replayability for me. IMO, only sandbox games (like Civ, EU, HoI,or the TW serie I don't like) would qualify, since you can play them almost indefinitly without being bored.

Hmm... I think System Shock. Somewhat dated now, but it had me engrossed like no other game before or since.
