Exsurgent: New issue, though a fairly innoccuous one (I think):

Necromunda: Hired Gun - the Steam version received 3 new cosmetic DLC packs today. These DLC packs can be bought on Steam either individually or together as the "Gang Wars Cosmetics Bundle". On GOG, you can only buy the "Gang Wars Cosmetics Bundle" right now. To clarify: This bundle includes everything the Steam version has, the issue is just that you can't buy the 3 DLC packs individually. Since the EGS also only sells the bundle version, I'm assuming this isn't just a mistake on GOG's part.

EDIT: Interestingly, the 3 cosmetic packs still have individual offline installers and they're treated as individual pieces of DLC in GOG Galaxy. Oh, and feel free to give me sh*t for buying the bundle even though it's literally just new skins for a first-person game where you barely ever see your character - I'm just a sucker for Streum On Studios and I want them to bring their future games here as well :D
They are available, that's what matters. I'm not going to add it because of that. That bundle exists on Steam too. Would be different, if these were only available via Premium Edition of any kind (like the Wasteland 3 situation).
But in this case, there's an option to get them. A few games on GOG only offer DLC in bundles

Lucian_Galca: Are we sure about Cardaclysm being on the list for missing updates? The list notes say it's missing updates since March, but gogdb says it's updated well past that and the last posted changelog on Steam

New missing DLC for A Hat in Time... man, this game will never get rid of its special place on the list...

A new DLC called Vanessa's Curse was released today on Steam. According to the description, this is "Creator DLC", which (as far as I can tell) means it's a fan-made game mode that's being sold as semi-official DLC. It's also multiplayer-only and since the "Online Party" mode hasn't been made available for the GOG build, I think we can assume that this DLC won't be released here, even with a delay.

I'm tired of Ironhide Game Studio, and GOG disappointed me again this time.

I saw that update last week, and it looks like that endless mode they added was there to sell microtransactions, so I can't say i'm that upset about it missing from the gog version. Though they could've made a rebalanced version without the microtransactions for gog.

Small update:
Added Kingdom Rush Vengeance — missing Mac build
Edited A Hat in Time — missing DLC
Edited Cardaclysm — is fully updated
Removed Deus Ex: Revision
Banner Saga 3 is missing Deluxe/Legendary Items DLCs. On GOG, they are available only bundled with Deluxe/Legendary Editions.
Industria has received its 1.0.6 patch today and can be taken off the list.
I was checking current sales and Wartile caught my eye (I mean this game looks aboslutely beatiful). So before buying I checked steam and gog for possible missing updates. Last update info I found on steam says that that the current version is v 1.2.114.0 which is a hotfix. The only info on GOG version, that I found, comes from What did just update thread and states the version of standalone installers as 1.2.113.0. So to anyone who has the game can you verify that's till the case? Also whether it's only standalone version that is outdated and galaxy is up to date or both are outdated.

According to GOG Database (https://www.gogdb.org/product/1341815553#builds) the hotfix is indeed missing here. Might be a case where the developer just needs a little reminder; they may have held off on updating the game here in case another hotfix or something would soon be needed and then forgot.

I wrote to them on steam forum as they don't seem to have discord. We'll see if they respond.

Just checked my game library and I can indeed verify that the offline installer is v1.2.113.0, date published: 5/5/2020. Hadn't realised the game was not up to date so thanks for chasing it up.
It's apparently a hotfix that was released 15 days after v1.2.113.0. From what I understand it fixes some stuff in dlc.
