One more game I wish had been released, C&C Renegade 2. That game (from what we know about it) would have been awesome.
I wish Jagex (before they turned into the ESG-laden cesspit they are now) would have actually released both Stellar Dawn and Transformers Universe. I was never a huge Transformers fan as a kid but I played the beta of that game and it was fun. Moreover, I would have loved to have seen old Jagex's approach to a sci-fi game and the little we knew about Stellar Dawn really did sound like it'd be a downright awesome MMO.
I would love a proper Batman Arkham sequel ( direct sequel to Arkham Knight or Arkham Origins 2).
It would probably be infinitely better than the cheap Gotham Knights or the Online-only Suicide Squad game noone asked for...

Every Half-Life main game are truly innovative, beyond the time of their release. Really curious how the next game would be in our technology state. Honestly I thought Half-Life Alyx was the 3rd game, but sadly not :'(
Recently started playing Dragon's Dogma: Dark Arisen (which I still don't know why I've hold off on for all those years) with a female warrior modelled after a certain chainmail bikini-donning sword & sorcery character and realised how much I'd enjoy a full-blown The Witcher 3-like open world action adventure with RP(-lite) elements and a good adult-oriented story (not shying away from sex & violence, even sexual violence), set in the Hyborian Age and the player taking on the role of a faithfully and true-to-the-source-material characterised Red Sonja.

"General Gameplay Loop:
What were the core actions players repeated throughout the game?
Primarily stealth and combat being the two main gameplay loops. Was to include the nemesis system (an earlier version) that we saw in Middle Earth: Shadow of Mordor.
There was access to vehicles, the Tumbler being confirmed.

Open World:
Did the world feel alive and interactive, or was it empty and lifeless?
Hard to say, too little is known. Project Apollo was quite early on.

Inspiration:
Did the game borrow elements from the Batman Begins movie or the Arkham games?
I would say that the game itself borrows quite heavily from the Batman Begins game in terms of stealth and cover, but could be compared to something like Splinter Cell with light and shadow, night vision and wall hugging mechanics.

Combat Mechanics:
How did combat function?
Also difficult to say, you can see snippets of combat moves in the upgrades screen.

Footage Authenticity:
Was the shown footage actual gameplay or pre-rendered cinematic footage?
The footage shown is actual gameplay.

TLDR: Monolith Games, developed alongside Arkham City (another contributing factor to the cancellation), Were never given the thumbs up by Nolan, ultimately cancelled.

Fun fact: Batman's model was actually used in early testing for Middle Earth: Shadow of Mordor as a placeholder for what would eventually become the Ranger of the Black Gate, Talion."

As nobody mentioned, I would like to remind that Jazz Jackrabbit 3 was never finished.
I loved the original Prey by Human Head Studios. I wish it's sequel wasn't cancelled. :(
