I watched various LPs last year and they were fun, but except for launching the rockets there wasn't much else.
No missions, no goals, nothing to do once landed on planets.
Yeah, there has been 2 campaign modes implemented a few versions ago. I watched various LPs last year and they were fun, but except for launching the rockets there wasn't much else.

- In the science campaign, you start with only a few parts unlocked. If you want more, you must go to as many different places as you can, do scientific experiments, then get them back to Kerbin to get Science points that you will spend to unlock new parts. Grabbing a pebble on the launchpad counts as "science", at least the first time tou do it, but of course getting a fully equiped ship to lower Duna orbit will be much more profitable.
Science mode gives you a goal (getting as many different experiment as possible to get science points), and is good for learning the game, as you unlock new parts rather than have them all at the start like in sandbox. Gives a nice feeling of progression.
- In the full campaign, you have science points and unlocks, but you ALSO must manage your money, do missions (that will give you money, science and reputation), build up your base (many features like 30+ part ships, having more than 5 astronauts, subassemblies, command groups, mission planification, etc... are locked when you start the game), hire astronauts (that get a specialty when they start, and new skills with experience)...
That said, that's still Kerbal. Apart from experiments (and missions, like "get to point X and do a report"), there's not much to do on the planets. The game is still pretty much "build a ship, fly a ship, repeat"
