I think you meant "I've stopped caring" (I no longer care). "I've stopped to care" means "I've taken a break from what I'm doing in order to spend time caring".

("stopped to ..." typically comes into play in sentences like "I was driving home after work and stopped to marvel at the cloud formations".)

Why the newer installer have a lower version?

It looks like a upstream version. GOG's build version is added after that.

And I can confirm that this (6550) is the actual version number shown in the menu of the Steam version (have a previous release backuped so I might look at this to see if the version number of the older game is higher there as well).

Edit: Last Steam version I have backuped (11/2017) was 6515 - according to the GOG changelog the last version here (with a changelog) was 6510. It seems as if the numbering of the previous version (6570) was incorrect here.
