For me its a mix of racing sims, driving simulators, slower-paced strategy games and certain RPGs.
My recommendation of GOG games would be these, assuming you want something relatively modern:

For me personally, of all the games on GOG that I've played, the X series have been the most ideal for me, especially since I've focused on trading.

If you are open to sim racing and non-GOG stuff I'd suggest RaceRoomExperience, Race 07 and Game Stock Car.
The same goes for driving simulators like Euro Truck Simulator 2 and ATS.
Podcasts are perfect when learning and practicing a new track or car, or doing a long haul truck delivery.

Any construction/management simulator: Sim City, Rollercoaster Tycoon, Transport Tycoon, Theme Hospital...

I'd do the same, I mean, got a bad rep in here (as a congo-zillian, to start with ;P) and this would be a nice chance to ''come clean'' ;D
I listened to a lot of podcasts while playing Stardew Valley. Any JRPG tends to be good for this as well, specially Pokémon. A lot of Dragon's Dogma too, though I already knew the story from playing it on console.

Really, most games can be played while listening to podcasts if you really want to. That's how I'm doing my NG+ playthrough of Bloodborne.

B0SC0: Question for the strategy folks recommending Civ and Paradox titles - These games always strike me as very text and engagement heavy,; is this text primarily flavour and can you ignore most of it once you've acclimatised to the mechanics and direction of the game, or is it pretty much a requirement and therefore not worth investing in while podcasting it up?
Civ series is mostly minimalistic really, if you already know the basic strategy of what to do in the game and what tech to research/buildings and units to build. At least in my opinion anyway. It's turn based though, so even if you do need to focus on reading some info you can take your time to do so.

Similar with Settlers, there's not much to read once you already know what buildings does and its relaxed pacing seems quite suited for podcasts.
