So, I've been trying to catch up on podcasts/interviews/shows that I've forgone over the years lately, and, in attempt to crack two birds with one stone, thought it would be a great idea to also catch up with gaming gems that I missed during my console years. Any recommendations for me?

Ideally can't be text or thought-heavy - I don't mind pausing to go through minor dialogue or cutscenes, but it shouldn't be too intense. Also, games from the early 90's are a bit of a slog for me, so try not to go too far back :P

Some games that I've enjoyed doing it to so far include: Prison Architect, Mini Metro, Torchlight, and GRID.

The Anomaly games are fun, well, until you get to Anomaly 2, which is just another TD.
You already mentioned Torchlight, how about Enter the Gungeon, Unreal Tournament, Terraria, Saints Row, Renowned Explorers, Empire Earth, Bombshell, BloodRayne, Aarklash Legacy?

1990s style FPS games- Doom, Quake, Descent, etc.
Euro Truck Simulator 2 or American Truck Simulator. :D

I don't think I'd be able to. Already hard enough when concentrating on the game itself.
Most city simulators, Rimworld, Prison Architect, Sim City, etc. Board game style strategy games also work. I often play Paradox or Ageod games while listening to music or podcasts. Just mute the in-game music and you're good to go. I found that shooters or RPGs take too much sensory concentration for anything else.
Morrowind. Just do free-form quests that you make up on your own like raiding Dwemer or Daedric ruins and sell the loot back to Creeper.
