My absolute favorite by product of yeast farts is Gugelhupf. It's also the only thing that could be erroneously mistaken for a type of fruit cake that I'll willingly eat.

I'd like to play. As of now, weekday afternoons look far better than weekday mornings or weekends. I get online about 6-8 pm
(and am then online on and off for the next 18 hours) uk time, only it might be 5pm uk time because of daylight savings time.

Close. Yes, the bubbles are caused by bacteria farts, but to get actual holes, one needs condensation seeds. I.e. dust particles on which the tiny CO2 bubbles collect. When the Swiss dairy industry upgraded their filters for hygienic reasons, suddenly the condensation didn't work anymore. Because there was no dust left in the milk.
Enter that guy I was talking about. He had a small business with precision mills that produced norm dust of different grain sizes for testing vacuum cleaners. (In Germany even the dust has to be normed). He got the idea, that he could sell dust to the dairy industry too. So now he produces herbal dust of just the right grain size, that is added back to the milk after it is filtered, so that the Swiss cheese can get it's characteristic holes.

Impressive! And how ultra clean environments detract from the purpose of the installation... Artisan goat shepherds/cheese makers complain that inspectors sometimes want them to have everything so clean that they will not have bacteria to work for them, and if they are producing organically (as they say in Germany, or bio, right? in other countries the term is 'echological") then they might have to add the bacteria artificially, which becomes more expensive for poor shepherds and also they risk losing the bio label.
