Santa would definitely enjoy Stardew Valley, as this is the perfect game to relax, have a good time and calm down before and especially after his work shift overkill on the 24th /25th.

Nevertheless, if too many people were naughty, Arkham Origins would be the perfect fit too, as Santa could calm down while playing as the dark avenging force at Christmas Eve, without starting a real Futurama-like Robo-Santa rampage running everyone's Christmas.

Most of the year Santa is not working because he has Elves doing all his work. So, since he only has to get up off his butt 1 night a year, he's going to need a game that'll take up a lot of his free time. That's why there's Skyrim! To give someone like this their ultimate fantasy as a Dragon Slayer! Now that's entertainment and accomplishment. He can quest, explore, and live a warrior's life until Christmas night! You know he's beyond excited for Elder Scrolls 6. I wonder what Todd Howard is getting for Christmas? Nice Giveaway, GOG! Thanks! Ho Ho Howard and Happy Holidays to come!

"What game would Santa play?"
I very recently went through my old GOG emails.
I stumbled over some that were confirmation emails for participation, and/or winning in old GOG contests (around 2013, 2014).
Or maybe I should rather call them "GOG riddles" or "GOG quests"?
Because back then, when "The EnigmaticT" was still around, these contests (riddles) were actually fun.
The "old guard" will remember them.
Those riddles where you actually had to put some effort in to find clues, decypher codes, etc.
"Best" of all: they took place here on GOG, in the forum. No external sites necessary (apart from Google and maybe wiki).
Fun times.

Indeed, those were the days. Still, they did get back to writing proper news posts, and their contests also require some user action and effort, while there was a time in the past when they had become plain raffles. Sure, I gather that's now illegal in Poland, so they're forced into it by law, but still, been worse...

What game do you think Santa would like to play and why?

I would say a game that make a game/video (cartoon) reference to Santa and Christmas. I would pick Cuphead. There is a cartoon with Santa and the Devil trying to get on the Good List to get a toy train. It has Santa and henchmen doing Christmas Eve.
