I'd have to say pretty much all the Amanita games and Lumino City.
It's hard to decide since there's a lot of visually stunning games out there, but those are my personal favorites.
There are plenty of other notable ones which did great in their field, such as the first Gabriel Knight game or the Chains of Satinav and its sequel Memoria. There's a few old Myst-like games which looked nice too, such as Schizm or Riven.
I agree with everyone, "Trine" is gorgeous.

"Riven" blew me away the first time I saw it. And I loved the black-and-white with splashes of color aesthetic in "The Lost Crown", and the photo realistic backgrounds.

I totally agree ... Amanita Design games are among my favourite, and Lumino City was also brilliant!
Many games full of eye candies, but if I had to pick one above others, it would be mornings in Skyrim.
