Thanks for the guide. Everything works, except I've encountered a bug in GOG Galaxy - time tracking does not work. Anyone knows how to fix this?
My gut feeling is that it reaches a buffer overflow after 65535 minutes ;-).

Seriously though, it's broken for me on many games -- I think it's to do with how the developers of that particular game deal with a GoG API. I wouldn't worry about it.

The OP mentioned we can install Unfinished Business for BG1, but what about BG1 Tweaks and Baldur's Gate Fixpack?
These were not even mentioned, should i install them too? I will play through BGT.

No.
When using BGT, all the mods have to be made for the BG2 engine.
So you use the BG2 fixpack and Tweaks.

So, just to clarify, Unfinished Business for BG1 works with BGT (that meaning it works with BG2 engine) , and i have to install it after BGT. I can't install the two mods i mentioned after BGT because they have been made for BG1 engine and even if i install those two mods before BGT they will not carry over BGT instalation because again they have been made for BG1 engine.
Finally the bugs that should be fixed with Baldur's Gate Fixpack only exists on BG1 engine right (that makes sense)?

Yes, and yes.
You can't apply any mods to the original saga (BG1), It needs to be a fresh, untouched installation when using BGT .
The only mods you can install in BG2 before BGT, is the BG2Fixpack, and TOBex. (If you want to use that.)
The BG2Fixpack can be installed before BGT, or directly after it. It makes no difference.
TOBex (If you are using it) needs to be installed first, on a clean install of BG2, before BGT.
The other thing, the widescreen mod at number 11 in the OT, should be installed last.
If you choose a resolution for the widescreen mod, and then want to change it (because the text is too small or something)
You MUST start a new game. If you change the resolution after you have saved your game at a different resolution, your game will become unplayable when you re-enter a previously visited location.

For nearly all Mods existing for BG1 and BG2 check out the Big World English PDF. currently V16

It listed mostly the latest mod versions and their best install order. Pick whatever mod you want and follow that order (check their version history to make sure its EE compatible, that is, if you use EE. Also newer versions are sometimes posted in the mods forum page).
You just need the latest WEIDu version, put that in your BG directory.

OSX has a convenient Weidu auto Installer (check beamdogs BG mod forums). With that installer you just need to have the mod's folder in your main BG directory and click the installer.

Resurrected igis spell system ( I personally love this mod. You can give you spells an exponential timer to come back memorized after a certain amount of time depending on its level after sucessfully casting it. So I usually give 1st level spells a 1 minute down time while 3rd level around 10 minutes, 6 level around 1 hour etc....

I downloaded all the mods for BGT, except Unfinished Business and the tweak pack. When I try to launch the game I get an error message, telling me to close the application. I never had this problem before when I downloaded the game via GOG downloader. This time I used GOG Galaxy to install the game. Is galaxy what's causing the problem?

If it was not fixed, Galaxy has a habit of overriding mods. You have to disable auto updates and install the mods again. I even opened a topic about that a year ago warning people not to use galaxy with BGT.

Most of the NPCs from BG1 are in BG2. Some are even playable. The only ones I can of that aren't in BG2 are Eldoth, Sharteel, Branwen, Kagain, Kivan, Xan, Skie, and Yeslick.

Don't forget Alora. It should be mentioned (the poster above is looking for companions) that with the exception of Jaheira, Imoen, Minsc, Viconia and Edwin all of the others are mere cameo appearances, or in the case of Khalid and Dynaheir, just mentions because they are now deceased.

@UnrelatedComa: If you search the old Baldur's Gate sites (Gibberlings 3 etc.) you can find mods that add certain characters back in as fully playable characters. Off-hand I can think of

which adds most of them back in as companions.
