Not Nessecary to Use EVERY creation.
If you wish to play without certain creations you must either rename their respective .esl or .esm file, or you must remove them from the Data folder of where you have Skyrim Anniversary Edition installed (example C:\GOG Games\Skyrim Anniversary Edition\Data\). The Creation Kit is also not included. You will need to obtain that yourself.

A Game of Freedom, Choices & Adventure!
From exploring multiple locations. Building your own home. To leveling your character. This game has a ton of other things now since the release of the "Anniversary Edition". Like more quests & activities like fishing. Finding the perfect build for your character & forging gear to enchanting it thus providing further benefits is also quite entertaining & interesting. Though that was already in the base game. Developing your character the way you want is truly your choice. Complete quests at your own pace or don't. You can completely disregard the main story/campaign altogther & do other things.

Home at last
Skyrim has finally found its forever home on my PC. With the release of the GOG DRM-Free version, I can safely and assuredly play the game forevermore. I grew up on this game, its modding community and the experience and lore surrounding the universe that is The Elder Scrolls. Dragons, Elves, Orcs and more. A fantasy world in which you (the dragon born) can explore in awe and facination. ...that is.... after installing 1000+ mods, crashing a zillion times, and screeching into the sky every time you accidentally pick up Meridia's Beacon. (She really needs to use her inside voice)
