Wizardry 8 Enhanced offers mostly conveniences and some very minor game play changes.

The single best Mod I believe is the Christian Coder Mod. Some super balanced rules change for all classes/races/attributes/items and spells. This mod is worth it just for this. The game feels like patched up upgraded vanilla game.

I first install Wizardry 8 Enhanced were you get Wizfast(speeds up monsters), Fastanim(speeds up animations) , transparent compass (2 compases become transparent offering a larger filed view) and the different UI (original Beta UI).
Then overwrite stuff with the CC mod on top. On OSX with Wine I just launch all the .EXE files (Wizfast, Compass and fast anim). Everything works great. Always make sure you wrapper points to the new WIZ8.exe file from the CC Mod (backup the old WIZ8.exe).

The only things you will not get due to this overwrite are some of the different potion and weapons icons of Wizardry 8 enhanced (CC Mod actually as some of its own icons) which I dont like anyways. You will not get the latest "fan made" patch. Which includes just a few adjustments to some numbers and portraits.

And BTW, PLAY THE GAME IN 1024x768 32 bit color mode!! It is so much smoother and looks great. Check out the clouds ;)
No idea why GOG packages it at lower rez. Just edit your 3DVideo.CFG file.
Check my other post for OSX users. You need to remove Glide and replace with OpenGL and need to download a .DLL file.
