never had as much problem with any combat in any game as much as this one, enemies are just too damn fast and too unpredictable to have a fair chance at dodging their attacks

im level 12 and im doing a level 8 witcher contract to kill a shreiker.....i've died about 5 times because i can't even get 2 hits in without it doing an attacking that hits 360 degree's and too fast to dodge

yes im using potions
yes ive tried every sign but only quen seems to be worth it for this
bombs are useless against it

but its not just this mob, its every mob, specially groups, how you're supposed to take on 5+ mobs at once pouncing at you from every direction and stunlocking you i dont know

in the souls games enemies would give indication of right before they were going to do a powerful attack but on this game its so fast its impossible to react in time and theres no invinciblity frames so dodging does jack shit half the time because you still get hit

maybe im just too used to souls games where if you have the skill you can go the whole game taking 0 damage, on this it seems nigh impossible to go a fight without taking damage

What difficulty are you playing at? Try lowering it down so you can get the rythm.
General rule:
Monsters = dodge.
Humans and Wolves/Dogs = Block.
I also had to remap the controls so my strong attack is on the side button of my mouse and stepback on left-alt.
Most enemies leave you time for either two fast attacks or one heavy- no more. Don't get greedy. Dodge small enemies and roll away from large ones, get in two hits, then dodge away. If you want to do more damage after each dodge, equip Aard and give them a blast after two hits, then sneak in one or two more.

It took me a long time in Witcher 2 to not get ganged up on and beat down. It's all about patience and not being greedy.
I just roll untill i am behind enemies, then 2-3 fast attacks and roll again =). always works. even on +10lvl bosses, quenn helps a lot, Axii is cool against people - guys with shields cant block, sometimes Geralt just one-shots human enemy under axii

well since you mentioned the Soul series - the same rules apply here:
don't get greedy! get 1-2 hits in then dodge away
try to fight single opponents at once - or at least keep them all in front of you and keep dodging back til you see an opening and remember: 1-2 fast attacks top, then back off again
as for signs: on higher diffictuly use quen (you can buff yourself up pre-battle)
axii against humans (you can mostly insta kill them when they are stunned using the heavy attack when standing nearby - shift + left click)
against heavy slow attacking opponents I recommend Yrden
against flying beasts use Aard or the crossbow to take them down
on lower difficulty igni is useful early against mobs of wolfs and drowners

In addition to what the others have said:

- potions, brew whenever you get a new recipe and USE the stuff
- mutagens, again: look what you've got and pick the ones most likely helpful to your style of playing (don't forget the "golden" ones, they work wonder!).
- oils, brew, use them. There is one for every kind of foe.

and you did 'equip' the skills you learned right? since you gotta put them in the skill tree at the right side of the skill sheet to actually enable them (passives and actives alike) and couple them with a mutagen of the same colour if possible
i play on normal difficulty and i feel the battles are to easy, all i do is activate quen -> spam x button (on my xbox gamepad) -> reactivate quen when it was destroyed -> won battle
only difference are big mobs like bears/griffons where i also hit b button to get behind the mob.
I'm really not good at combat but have managed fights pretty well so far. I feel like normal could be slightly more challenging, that said, I haven't tried the harder difficulties.
With the shrieker contract in particular:

- Stay on your horse as much as possible at the beginning of the fight and take chunks out of it from there.
- When you can't stay on the horse, due to Horse Fear, use the Aard sign because that one stuns the creature and also causes it to fall out of the sky.
- Always try to get behind the creature and then attack from the rear to cause critical damage.
- With large beasts that can do large swipe attacks, roll out of the way, then roll back to behind them and attack again.
- Aard, Aard, Aard!

For groups of enemies, you need to use the same kind of technique.. use a sign, like Igni, to kind of stun 2 or 3 of them at once, then roll behind them and attack from the rear. Aard is good too for humanoid creatures because it knocks them over and you can insta-kill them.
I find normal keeps you on your toes and isn't frustrating, except for the Gargoyle found in a side cavern during Wandering in the Dark.. I must be at to low a level when doing this quest, as the narrowness of the cave and the lack of Golden Oriole make this battle extremely frustrating and I normally turn it down to easy after 5 or 6 attempts, then practically insta kill. But then, I'm in my 60's so my reflexes are probably slower than most.

Well, I love Witcher 3 combat system for the exact opposite reason. It seems very fair to me.
Besides applying all the good advices mentioned above, why to not lower difficulty?
If you didn't play Witcher 2, just take time to familiarize with combat system!

I may be wrong but Witcher 3 seems, on the contrary, less difficult than its predecessor to me (I mean Death march vs Dark mode).

completely agree with everything you said. The highest difficulty in W3 is still very managable and fair, sometimes even a little too easy (even though I prefer not having perma death)
The "Attack and roll" ( that is heavy hit from a distance the monster can't immediantly hit you then dodge-roll away and repeat) method for fighting large monsters is a pretty basic method if you dont want to plan out potions and signs.
still can't beat this FUCKING SHREIKER

I CANNOT GET MORE THAN 1 HIT OFF WITHOUT IT DOING A 360 SWIPE THAT TAKES OFF 50% OF MY HP AND MAKES ME BLEED THE OTHER 50%

im fucking level 12 and its level 8 holy shit, why the fuck does geralt get stunned after 2 hits even after stunning it with aard?
