On Steam there are ports of the game for Mac and Linux, on GOG i see only the Windows one, why is that?

That is most likely publisher related. 2K Games is the publisher of the Windows version, while Missing Link Games is for the Mac version. Maybe they don't want their version to be here. Don't know about the Linux one. Same thing happened to BioShock Infinite as mentioned by a Blue here.
