I know there have been like a hojillion different covers, but I always liked the original Larry Elmore covers for the Weis & Hickman trilogy of Dragonlance novels, Dragons of (Autumn/Winter/Spring). There are plenty of covers with demonstrably better artwork, but few I can think of that fit so well with the world and characters.
Failing that, I really liked the novel Flatland, and the cover sticks in my memory.

That must be the difference, over here everything he's done is by Tor Fantasy. The minimal palette of yours is interesting.

Neil Gaiman's The Dream Hunters, illustrated by Yoshitaka Amano is one of my favorites.
