I noticed it with some other game, but also with Zuggurat II here, which is at 480p:

I thought that it was because the HD version hadn't been proceeded yet by youtube (I think I've noticed it being somewhat behind, the low-res uploading first) but this was uploaded a week ago.
I see this all the time, when checking out release announcement threads. I don't go back to check if the trailer is available in HD after that first impression. If YouTube requires more time for processing, GOG should upload the files earlier prior to the release announcements.
Aren't they just YouTube clips, so in reality GOG isn't uploading anything, and linking to a lower quality gives broader customer support, and I for one appreciate that ... GOG's web pages are bloated enough.

In any case, you can right-click on them and open at YouTube and then pick your quality ... if available.

GOG uploads trailers to their YouTube channel.
Selectable video quality is what gives broad compatibility.
Not only are the video quality options the same when embedded, but there's a standalone link right in the OP with the quality only going up to 480p.

I don't know where you got that link, but the store page has a different trailer link that goes up to 1080p@60fps:

the more alarming question is why on earth is it unlisted ?...

That's true for most trailers on the GOG YouTube channel. It doesn't make any sense to me either. The Ziggurat trailer is not unlisted, for example. It also goes up to 1080p@60fps.

The strange thing is that I got it from the store page too. But when I look at the store page now, you're right, it now shows a HD version.

Low-res version 836 views — uploaded Nov 17, 2021
HD version 11 views —uploaded Jan 25, 2022

Puzzling. I believe it's possible to replace YouTube videos, so I don't see the point of the separate upload.

Probably marketing and analytics, wanting people to watch from the GOG site, not just find the trailers on YT.
I'm a bit surprised the video only had 836 views, considering that only a small part of those seeing a video cough up money.
