Star Wars: KOTOR 1 and 2, Cyberpunk 2077, the entire Deus Ex series (especially Deus Ex 1: GOTY and Deus Ex: HR DC), the entire Fallout series (except for Fallout 76 - it's meh, multiplayer-only, and not on GOG - so get Fallout 1, 2, 3 GOTY, and 4 GOTY, which all range from really good-to-great), Wasteland 2 and 3, Shadowrun Returns Trilogy (SR Returns, Dragonfall, and Hong Kong), The Outer Worlds with all DLC's (For Eridanos DLC) or The Outer Worlds: Spacer's Choice Edition (which is a Remaster for high-end PC's, provided you got a good PC - just make sure you go Complete Edition either way so you get the awesome Eridanos DLC), GameDec, Mars: War Logs, and The Technomancer (i.e. Mars: Wars Logs spin-off and sequel of sorts).
Out of the sci-fi RPGS you named, I played most of them and I enjoyed them, especially Shadowrun Trilogy. Gamedec, Mars:War Logs, Technomancer are in my backlog. I played some Wasteland 2, but didn't get far into yet, will get Wasteland 3 later. I had my eye on Outer Worlds for a while, but waiting for a better price, especially when I want all of DLC except Spacer's Choice.
Mass Effect Trilogy (with all DLC's) or Mass Effect: Legendary Edition (Collection with ME1,2,3 and all its DLC's) is also great - but that's normally on DRM-walled stores (i.e. Origin and Steam). I wish it would come to GOG.
I only played the first Mass Effect on the PS3. I was hoping for GOG release as well, since I think the combat would be more suitable for me using a keyboard and mouse. I have trying to avoid stores like Steam and Origin, so console may be my only option for a while.
I have to check out Encased, Underrail, ATOM RPG and Trudograd at some point myself; all backlogged right now.
I heard Encased had troubled development, thus had a strong beginning but feels unfinished endgame. I haven't got got too far personally, enjoy what I experienced thus far.
I personally find Underrail frustrating and fascinating at the same time. It's a combat-intensive game that tests the player's build and resourcefulness. As a person that likes hoarding loot, the weight limitations can be annoying when combined with merchants that particular about what they will buy at the moment.
Also, for sci-fi stuff - even though these do lean more on the immersive-sim side (shooter/action/RPG/stealth hybrids) - go check out Bioshock series, System Shock series, and Dishonored series.
I liked the first Bioshock, but haven't got around to the sequels yet. Endgame areas aside, I had a good time with System Shock 2. I have reservations about System Shock 1, although I might try the remake.
