And the Monkey Island series of course.
Good point, some mentions above of risen2 and 3. Do bear in mind there are a fair few bugs in risen 2. In my current game largo has vanished, not even in the tavern. So I moved on to risen 3.

I also note that some have mentioned tempest. I do have to disagree, that is one of two of the worst purchases from here. It was built for mobile, they didn’t bother changing any of the UI, so be prepared to try swiping with a keyboard. Second the sea maps are all the same and no real way of differentiating ships. And you spend half an hour sailing toward each other. I haven’t got the latest dlc, but it’s one of two games (man of war the other) I really advise against buying unless you demo it.

I really recommend black sail, there is nothing near to it.

kai2: The Risen games are fantasy pirate themed RPGs (at least games 2 and 3 in the series).

Tempest is another fantasy pirate themed mainly nautical action game with some RPG elements.

Man O' War Corsair: Warhammer Naval Battles.

And then there's Corsairs.

If you're looking for a "straight" pirate experience -- and since you own the Sea Dogs games -- I'd suggest looking into the brilliant and extensive modding community for those games.

lwcasss: I've added the Risen and Man O' War Corsair games to my wishlist, but for now that's all they are, wishlisted games. When I get a better computer I may buy them, because I'm 99,9% sure they won't run on my current one.

I've wishlisted Corsairs and it looks neat, it says it's a RTS, but how much of a RTS is it? Is it like Age of Empires where you only play in a single map against one or more opponents or is it more sandbox pirate stuff?

I actually only own the first Sea Dogs game, I've seen there's two more here on GOG, City of Abandoned Ships and Caribbean Tales. CoAS appears to be quite good compared to the first one from what I've seen from the reviews. And I'll have to play vanilla Sea Dogs a lot more if I'm going to start fiddling with mods.

tfishell: It's not on GOG but look into Akella's Pirates of the Caribbean 2003 game ("acquire it" as need be, it's not sold on any digital distributor) and maybe look into the "New Horizons" mod for it. It was originally going to be Sea Dogs 2 I believe.

lwcasss: Thanks for the suggestion, if I get tired of Sea Dogs I might succumb to the tentation. But it's odd, it was developed by Akella, why didn't they published it here alongside the Sea Dogs games? Actually, it's Pirates of the Caribbean, so I'm gonna go ahead and guess legal issues with Disney.
It was a last minute deal with Disney which made them change the title to match the movies and add some movie themed props, ships and characters.

Some of those you might encounter when playing a modded COAS. Like movie Davy Jones as rare encounter NPC Captain; whom you can hire in a bar. And at the same time fight him when doing the Dutchman quest series :D

Sometimes when strolling down the pier some guardsmen greets with a "Tell Davy Jones I said 'ello" to which I think "hes right behind me man, tell him yourself." Fun times :)
Two Worlds 2 has a pirate theme to it as well.
EDIT: Well, the DLC does.

If you like point and click games then you can also check this one

You can likely find the English version of Kaptajn Kaber i Kattegat. somewhere online. It's a danish roguelike pirate game from 1985.
FTL is a space game, but I feel that it somehow captures the spirit of piracy.

Also! here's the Peg-legged Father song from Stingray Sam.

Don't some of the Wing Commander games have some pirate themes? What about Privateer, although probably more of a "legal pirate"...
Plenty of titles have already been mentioned, so here's my contribution. Admittedly, the second one is stretching the definition of being a pirate, but if you've got the sailing itch, it's a good game.
