I'm looking for new local co-op games to play with two other players, on PC, Xbox or Wii(U), ideally with controller, but it seems there aren't all that many to choose from, not even on console, and there are three additional difficulties in finding one:

1. We've already played all the top choices like:
- Castle Crashers
- Rayman Origins/Legends
- Lara Croft and the Temple of Osiris
- Dungeon Defenders
- the Worms games
- Yoshi's Woolly World
- NintendoLand
- Wii Party (U)
- Mario Kart (Wii or 8)
- some other Mario games for Wii
- some Pikmin game, I think (but that was without me)
- Rayman Raving Rabbids
- The Cave
- Trine 2

2. The third player is a bit picky and prefers funny games; she doesn't really enjoy sports, beat 'em ups, shooters, RPGs etc., especially not if they're just dark, gory or difficult, without any funny elements (so no Gauntlet, Mortal Combat, Pro Evolution Soccer etc.). She prefers co-op over competitive games as well. Magicka was alright for a bit, but a bit too complicated. She likes Stardew Valley but that one is still lacking the couch co-op feature so far.

3. With a lot of games that are listed as couch co-op games, it turns out that they are just partially so, featuring limited modes or mini games for local multiplayer which might be good for 5 minutes of fun, but the main game is just for one or two players at max ...

Any recommendations for true 3-player couch co-op games (that aren't that dark and serious)?

Magicka 2 is simpler than the first one was.
Broforce
Towerfall
I suggest having a look into Trine. It is not really humorous, it is more of a fairytale style kind of game when it comes to story and design. I did a quick search and it seems to me that local coop is a thing with this.

It is.
Trine 1,2 and 3 all support local co-op for the entire campaign.
Monaco
Guacamelee STCE

This last one has good humor but it is not meant to co-op, that's something they added later on so I don't know if it will be enjoyable or not to co-op.
Deadly tower of monsters

Guacamelee is 2 players max isn't it?

Nope, there's 4 person co-op, quoting from store page and I've played it with friends before so I'm quite sure it does. Gold edition has 2 player co-op, STCE has 4.
Drop in/out 4-Player local co-operative play, featuring independent dimension swapping

Ah, never really played it with others so I wasn't aware.
Have you and your friends ever tried Rock Band? It might be a bit expensive to get all those plastic instruments but I can attest that it is quite fun with 3 people playing in a band. Starting with Rock Band 3, the musical positions available are: guitar, bass, piano, drums, and vocals.

edit: we've played quite a few Rock Band titles but the one with the best music setlist in our opinions is LEGO Rock Band.

Havent tried Trine 3 but Trine 1&2 are lots of fun to play co-op. I cant say it is funny but you laugh alot while failing.
I play a lot of co-op games with the kids, so I kind of understand what you are looking for. Worms & Trine have already been mentioned, but here are a few more.

Megabyte Punch - like a mashup of Megaman, Street Fighter and Contra, you play as a robot fighting for a race of robots. when you defeat your enemies they drop parts, use these part to upgrade your character ans give them special moves. It supports up to 4 player local co-op but the down side is that it uses split screen which is a little awkward for 3 players. one player gets half the screen while the other 2 get 1/4th each.

Octodad - Not what you normally expect from co-op play, but lots of fun. Each player gets control of 1 or 2 limbs as they try to navigate Octodad through his grocery list, an obsticle course playground an a backyard BBQ. It's not reccomended for highly competetive players who just want to win, but great for players who want to laugh.

Oblieracers - This one isn't on GOG (hmm.. it doesn't even have a wishlist entry, I should go fix that) but is available through Steam. I was able to get a demo copy back when it was on Kickstarter and called Space Dust Racers, so some things may have changed besides the name. It's a Mario Kart inspired racing game that supports up to 15 local player co-op. Rather than having a split screen, all the players share the same view. As you play the camera follows the main pack of racers and anyone who falls behind drops off the screen and gets eliminated from the race. This creates an interesting strategic situation in that the last place racer is in danger of being left behind, but the first place racer is a target for everyone else. There was also a mode where an eliminated player gets to control an onscreen targeting recticle for calling in air strikes on the remaining racers.

Oh right, Octodad is amazing with friends, turns on limbswitching after every checkpoint. :D
I've played a lot of Crimsonland in co-op. It has support for up to 4 local players. A simple, but great co-op game. The problem is.. it's dark, gory, and difficult :P It has some element of humor in the perk selection-screen though.
