AMD's website lists games that support their technology, but it looks like they never link to GOG. It's always to competitors with DRM. Since I already looked up this info, here's what I've found:
GOG games that support FidelityFX Super Resolution:
The Medium: Adventure, Action, Horror
Necromunda: Hired Gun: Action, Adventure, FPP
Myst: Adventure, FPP, Puzzle
Hellblade: Senua's Sacrifice: Action, Adventure, Fantasy
Ghostrunner: Action, FPP, Sci-Fi
Gamedec: Role-playing, Adventure, Sci-Fi
Edge of Eternity: Adventure, Turn-based, JRPG
Chernobylite: Shooter, FPP, Survival
Baldur's Gate 3: Role-playing, Turn-based, Fantasy
AMID EVIL: Shooter, Action, FPP
Terminator: Resistance: Action, Adventure, Sci-Fi
Horizon Zero Dawn Complete Edition: Action, Role-playing, Sci-Fi
The Riftbreaker: Strategy, Building, Survival
GOG games that are listed as later supporting FSR:
X4: Foundations: Simulation, Action, Sci-Fi
Raji: An Ancient Epic: Action, Adventure, Fantasy
No Man's Sky: Adventure, Action, Sandbox
Hellish Quart: Action, Combat, Fighting
GOG games that support Contrast Adaptive Sharpening:
Star Control: Origins: Action, Strategy, Sci-Fi
Cyberpunk 2077: Role-playing, Action, Sci-Fi
The Hand of Merlin: Role-playing, Turn-based, Roguelike
Serious Sam 4: Action, Adventure, Sci-Fi
MechWarrior 5: Mercenaries: Simulation, Action, Sci-Fi
No, I don't quite understand what "contrast adaptive sharpening" is, either.
