If you want to become a pilot in real life, okay, I understand why you would need something similar (no one would allow you to command a airplane without training).

One guy I know uses 5 widescreen monitors and has a control panel of switches and knobs that looks like it's from an actual aircraft. The whole setup cost him a few thousand dollars, but he justifies it as being cheaper than an actual plane.

That's nothing, people construct entire fictional cockpits for air sims. My boss is currently snatching real cockpit bits to construct one of his own home.

3. RTS except for the old school C&C (which I sucked at)
4. Racing except for one the Need for Speed games, I think it was underground.
5. Any mobile game.

Racing, DDR, sports, MMO, MOBA.
I suppose I might still give them a try if any friends really recommend it, but otherwise I would usually never play those.
Sport. Nothing personal; I don't watch many sports in real life, so pretend sports don't have much appeal.

Fighting Games. I used to play these casually with friends and siblings, but "modern" fighting games have become so complicated compared to Street Fighter 2 that I find them basically inaccessible. Plus, the people I played them with are in different states now, and I don't find online play appealing.

MMORPGs. Because that's the sort of thing I might obsessively spend thousands of hours on, and I know a bad idea when I here it.

RTS. Don't have any real reason for this one; they passed me by when I was growing up, and I've never tried to get into them since.

"Realistic" racing games. My knowledge of cars is that they're large metal objects that can be used for transport. A game that tries to sell itself on customizable cars, or "look, we have this car in our game, isn't that exciting" is just ... no. Basically, if I can't shoot missiles at the opposition, the game's probably not going to do much for me.

Mmo's
platformers
and probably many obscure types of games.
Racing, sport - I don't find them to be intresting, not even in real life.
Fighting games - Zero intrest. Zero.
RTS - Not really my cup of tea, no real reason why.
Platformer - I am the worst platformer player in the universe. I do enjoy *some* platformers, but it's a rarity.
Horror - I hate being scared :P
Shooter / FPS / TPS - I don't really find them to be entertaining.
MMO - I used to play. Then the community went down the drain, and now I just avoid them like plague.
Music-based games - My musical hearing is nonexistant.

Hmm..

Realistic sports & racing games. I like them to have some arcade flair. Mutant League Hockey for example, such a great game for the SEGA Genesis. Racing games need to have chaotic and fun to watch parts. Good damage models on the cars, lots of metal flying everywhere, a spectacle to watch. Grid was really fun, Flatout, Destruction Derby, etc etc..

The one sports game I can play with no twists is boxing, but I really enjoy fighting games so boxing always gets a free pass.

MMOs and MOBAs, I don't even really have a reason other than they just plain don't interest me.

Hidden Object and mobile games are a snooze fest to me. Most rail shooters suck. Most realistic sim games are uninteresting for me, like plane and train simulators.

On the flipside, my most played is RTS and FPS probably.
Sports games.

Fighting games (most of them at least, especially Super Street Fighter 2 and such).

Party reaction games (like all the dancing games, Guitar Hero etc.)

Generally games that require two people to be enjoyable (I think most sports and fighting games fall into this category, at least people who like them always tell me they are interesting only against human opponents.)

I'm going to assume that "never" allows for "played them for a while until I was sure that I didn't like them. Otherwise I would have to say that there is probably no genre (if we're talking about "genre" in the sense of game mechanics) that I haven't played at least once. With that assumption it gets quite long instead.

Third Person Shooters (e.g. Max Payne, Mafia, Alan Wake)
Action Adventures (e.g. Tomb Raider, Outcast)
RPGs (more on the action side e.g. The Witcher, Deus Ex, Mass Effect)
drivey-shooty Sandbox/Open World Games with a story (e.g. GTA, Saints Row)
Sports Games (e.g. FIFA with a couple of friends)
Beat'em Ups (e.g. Mortal Kombat, again with friends)
3D Platformers (e.g. Prince of Persia)
2D platformers occasionally
Stealth Games (e.g. Thief, Splinter Cell)
whatever the hell genre you'd put Rocksteady's Batman games in
Action Space/Flight Sims (e.g. Wing Commander, Crimson Skies)

Otherwise I can and do play everything else.
