I don't know, it really depends from the game. I mean, usually F2P on Steam are also Steamworks, meaning they need Steam for microtransactions etc, and so GOG should adapt them to Galaxy at least.
Other times you can find the installer from the site of the publisher, in that case you don't need GOG at all.

That's why terms like "freemium" came to exist -- "free-to-play" can give the wrong idea. :)

I haven't tried it yet, but I think there at least one type of "practice" mode where you can play against bots. I don't think there's any kind of single-player campaign or anything, but for a free, open-source arena shooter, that's hardly a surprise.
