ZFR: Iceland is one of those countries that I'd love to visit, but if I do, I'd spend at least a week or two. 2-3 days just won't do.
Certainly. I'd probably want to spend at least a month to begin with and then never actually leave. Once I figured out how to eat there, that is.

Only the "traditional" food is awful, you can buy a lovely hamburger or hot dog just about everywhere, so you might last a month on that alone ;)
Also - lamb bbq.
If you're vegetarian/vegan - you'll be fine too.

A month or 2 in summer? Sure. But too little daylight in winter for me. Ireland is bad enough as it is.

And the local cuisine doesn't look that bad. never tasted it, but I'd love to try it.

Well, I always made it through with lots of drinking and partying, but getting older, that might not work as well...
But yeah, winter is difficult. There's actually a word in Icelandic: "short-day-depression".
Having really long days in the summer though is great.

I'm actually a zero-chemical consumer/naturalist. I'd say organic, but here in the US they allow non-food items into organic foods, so that doesn't even pass a lot of the time. I'm sure I could work it out.

Mhm, I don't know what exactly this entails, but it wouldn't per se exclude meat, would it? Since the sheep (and incidentally, horse) meat there is probably as good as it gets (at least compared to German standards).
Organic vegetables should be doable, too, just a little planning ahead required ;) Oh, and sufficient funds, of course.

Oh I eat meat, but only if it was humanely raised (and not by some corproations standards, but by my own.) I figure sheep being raised on graze-land in iceland will be QUITE acceptable, horses too. Yum yum.
