Things are now different once again regarding subtitles. The subtitle version is still included, but there's no option in the installer. Instead, install like normal and don't worry about options. Once installed, you have to go to GOG Galaxy, find Simon in your library, click the "More" button next to "Play". Scroll down to "Other" and there will be the option "Simon the Sorcerer (floppy)". Choose this to get the subtitled version. Unfortunately, talkie games of this era often did not have the range of choice we have now regarding subtitles (all early Sierra games were the same way -- either voice-only or subtitles-only), so this is the closest you will get to a subtitled version of the game! The sound quality takes a bit of a hit and the graphics look a little less pretty, but other than that, it's the same great game.
