Having a version of Skyrim you can rollback in the future without a downgrade patcher is a game changer for modders. The last few updates have broken some mod compatibility. The only downside at the moment is that it currently doesn't work with the Almighty Mod Organiser 2, which isn't a huge problem, and will likely be fixed soon enough. Though I will be dead and gone before I use Vortex. I will be using the Steam Version for now until MO2 compatibility is a thing, then you bet your Aunt Caroline that I will be switching over to GOG. Rollback is a really great feature, and a proven necessity for Skyrim these days.
