I want to play this zoomed in and filling the screen as I was shown in the video. I can't find this option anywhere.

Go into the configuration tool, and there should be a drop down menu called Display Mode. Change it to "Chronicles (30:17)". Just be aware that this does not actually expand the view of the play field, it only zooms in. But it does mimic the full screen view of the PSP version.
