Figured I'd ask since these seem like they could be the "problem children" of the series, compatibility-wise. ;-)

(To those who don't often use the game forums/GOG newbies: if there are significant issues [crashing], be sure to email Support; minor things the community can probably help with.)

Upon starting Gold doesn't show the videos and later crashes. But since I prefer the Dos version of W7 anyway, it doesn't bother me much.

W8 I haven't tried yet.
So far on Win 8 I can't get Wiz 8 to launch. The .iso I downloaded from somewhere works fine though.

Gold might have some issues. Hopefully GOG has worked them out.

W8 has always worked fine for me in both Windows 7 and Windows 8. Make sure that you install outside of the Program Files directories.

There are a few bugs in Gold, like the Diplomacy one, that even mad-god hasn't been able to fix. So it's highly likely it's still there. That alone makes Gold unplayable for me, not to mention I hate the portraits AND the voice-acting.

I also doubt GOG has fixed the "everything slays Fighters" bug in both versions, but at least that one's easily done in like 2 seconds in Cosmic Forge.
Wiz8 works well on my 64bit windows 7 laptop... I like the dos 7 over the gold but that's just me.

In Wiz7, virtually every monster and weapon in the game that doesn't do extra damage to a specific type (Stave Pro Undead to undead, or *Light Sword* to robot, Mystery Ray to android, a few others) does extra damage to Fighters. While this can sometimes work to your benefit against monsters that are Fighters, it makes using a Fighter in your party substantially less useful than it already was. You can fix it super-easily using the Cosmic Forge game editor, though. I'd noticed in the past that my Fighter characters never seemed to be able to catch a break on damage, and apparently this is why.

Basically, all the weapons and monsters had the "slays" byte set to 0, and 0 is the class value for Fighter, rather than the value for "none." Cosmic Forge changes all the weapons' and monsters' "slays" byte to an unused value.

But why would you take a pure fighter... even with class changing in mind I don't see a good reason to have one

Well there isn't any reason, really. But it's still a bug. I didn't want to get free damage on those poor monsters that are defined as Fighters, either. Mostly it's T'Rang grunts and Umpani grunts, but Rattkin Leaders are Fighters, too.
The text speed thing is the big problem with Gold in OSes of Win Xp and later. Last time I checked no one had solved this so I doubt GOG has either (but then again wouldn't that come up in testing? Maybe they did solve it? Anyone know?).
