Yes, all GOG game installers have the option to install wherever you'd like. Uninstall the game and reinstall it slowly reading everything on the screen to look for options, then select the right options. If you just do the default you get it on C: :)
We're designing it that way, so you shouldn't be forced to install games into a specific location or drive. For the time being we're Beta testing and some options are not available yet. Thanks for understanding :)

Just wanted to clarify my previous comment that by using the option built into the game installer I was successfully able to install the game itself to "E:\GOG Games". Galaxy client installed itself to C: but that wasn't a concern to me. So as far as I can see, anyone should be able to install the game itself to a drive other than C: by clicking on the game installer downloaded from GOG, then clicking on the button labelled "Options" on the bottom left of the first dialog window that comes up during installation, and changing the path to wherever you like.
