Found a solution to this on my system. It may, or may not, solve your challenge if you experience the same issue...

I usually got a black screen like if someone ripped my 3D card out of my computer and no BSOD and it would happen like many times or once a day at random,
I did try the various hints on the net like editing the registry with new DWORD values for TdrDelay and TdrDdiDelay=60 for both to no avail.
What actually worked for me was to use DDU to uninstall the drivers in safe mode, reboot and then install the older driver "460.89-desktop-win10-64bit-international-dch-whql.exe" from 2020.
It may not be the best driver for any game, I don't know, but it worked for me for this one and that's what counts. I have lost several animals due to this bug as my prey (which I did already shoot) did not exist after reboot and restarting the game...and my frustration was 'over the moon'.

Replying to my own post here as people may not have my knowledge:
I have of course prohibited Nvidia update in my application firewall (wf.msc) and I can honestly say I have never experienced this failure ever since. Windows update is not (as of yet) restricted and that may be an issue, but so far so good.
This game, being digital, I love killing digital prey, but hate the game crashing for digital reasons and so this is my solution, yours may differ :)
