I heard you unlock units by playing in this game. Is it possible to unlock all the units by playing offline? If the multi-player servers go offline will I not be able to unlock anything? I probably would play some, but I am worried I won't be able to get all the units I want. Once I did unlock everything I wanted, can I use them in offline? I also heard there is no LAN on this game, is that true?

I bought Wargame on release day from here and run it on my PC without an active internet connection.

I haven't made an account and I can unlock stuff using the SP Campaigns and skirmish mode, although in skirmish it appears that the XP you gain is limited, playing against harder AI does seem to allow for more XP gain. I find the hard AI to be not necessarily harder, but it uses later, more advanced units. It can be a bit of a grind getting levelled up though and you can used these units in a custom deck offline.

Unfortunately as far as I can tell there is no Lan and for me the multiplayer option is greyed out (I don't have an account which is probably why this is the case)

One last important note, these unlocks seem to be going to a default profile (which is probably specific to the GOG version of Wargame) so if you were to ever want to play online you would need to make a profile and I doubt the unlocks would carry over and I don't know if an online profile would allow off-line unlocks.
