In the same boat. I filed a support ticket with GOG but didn't hear anything back. Would be great if someone from GOG could comment.

I of course I understand it is up to the developer/publisher to provide GOG with the latest version, but perhaps GOG could reach out and speed that process up.

Hello, you already have that build updated for OSX version 2.07(20191022). It's just the mac build which has been updated.

I can vouch for the current download from GOG being a 64-bit app. I've been playing on an iMac with macOS 10.15.1 (Catalina) for the past couple of days.

I've recently got an iMac running Catalina 10.15.7 (final release) and Victor Vran just crashes on launch for me. Anyone else running it successfully on this OS? (Or, indeed, on Big Sur?)

Not an independent opinion but a different machine and OS... I just downloaded and installed on a 2017 MacBook running Big Sur, and the game launches to the configuration screen without crashing. It doesn't display properly (uses only the bottom left corner of the screen), but that may be because the MacBook's integrated graphics don't meet the game's requirements. Definitely not a 32-bit crash, though.
