How does one skin animals in this game? I have a knife equipped but none of the commands seem to work.

Click on the charecter that has a knife or scissors and bring up their inventory screen, now click the use icon and click knife or scissors and then click the beast you want to skin or cut up for meat, what you get is depending on the creature and item knife is meat and scissors for pelts if I recall.

As people above have said, apply the use command on the knife and then target that on a dead animal. The only animal which actually gives you a skin is the sabretooth tiger. You can obtain meat from other mammals the same way, and feathers from dead parrots.
