With Ultima: Underworld, what is the replayablity like? If I complete the game, can I go back to anything new?

You can try different character classes, but the environment, the quest and the NPCs will always be the same. Just your approach to them may differ a little.

Not much replayability.
Wait 5+ years before you play it again.

There are a few minor things that vary each time, partly (at least in the case of UW2) on the basis of your class/skill choices, and partly at random. There aren't any major world differences, though.
