Finally getting around to trying GOG's edition of the great Ultima Underworld and I'm curious whether it's possible to edit the control scheme. I've got the sound back to the "proper" Soundblaster setting, thanks to everyone who posted about that, but I haven't been able to find anything similar for remapping the keys. Not the end of the world if it's not possible, but wow, these controls are seriously out of date.
Personally I found that using only the mouse worked very well.
I personally like the default layout the gog one uses. Doesn't take too long to get used to.
Ultima Underworld has no mappable keys, much like most Origin games. You could try the DOSBox keyboard mapper, but that will completely re-map the keys, even for typing.

The controls of Ultima Underworld are actually pretty good, using the left-hand keys for movement before WASD was a thing. You can use A and D to rotate left and right, W to run forward, S to walk forward, Z and C to strafe and X to walk backwards. Most items in the world can e interacted with using "default mode" (look it up in the manual), so you won't need the icons like talk, use or grab at all, nor their keyboard shortcuts
