Does Origin need to be installed for this?

No, GOG has no DRM and Origin is DRM. The only thing that is with the GOG versions of Ultima is Dosbox and that is it. The EULA is just a generic one EA used instead of typing up a whole new one for the GOG releases.

No, the Origin Launcher/Service is specifically EA. I think it was named "in honor" of Origin Systems... or maybe to shift focus from Origin Systems to EA's software platform... not sure.
