Speaking about old games like the Ultima series .... in your opinion is better to play them Windowed or Full screen?

Windowed is probably better unless you have a small/old monitor; even with scalers, unpleasant levels of pixellation occur at full screen resolutions. Something like hq2x windowed with Dosbox is usually much easier to look at.
Another option is to combine a non-stretched fullscreen mode with a scaler, so the game is displayed at a reasonable size with everything else black so it's not a distraction.
I usually like to play all games fullscreen, just to reduce distraction and to get the right atmosphere.

But in Ultima games, one needs to keep lots of notes - and I like to keep my notes on my laptop. So, Windowed with 2 x scaler is the usual option too.
I don't use a scaler and it works better if you want full screen.

Overlay causes a green screen and Surface doesn't allow scaling, so I use openGL and leave the scaler blank.
