A couple times now I've recieved a quest to kill (Gremlin, Orc, etc), I do, and when I return to the castle British just orders me out to finish my quest.

Am I missing something?

Yes, GoG has inexplicably put a buggy fan-made port as the main game for PC. Play the 1998 version, quests will work...

Same here. Lord British released the source code. Is there a link to a version that is pre-configured to launch with DOSBox like the version released through GoG? Can you provide a link? I've seen some modded versions of the original, but they tend to not run as smoothly as the GoG version, buggy as it is.

The 1998 release runs without Dosbox.
