Apparently you can play through several ages. My question is, can you pick one and stay with that, or is it that you have to play through all of them?

Playing sandbox mode, you are allowed to choose your starting era.
As soon as you meet all requirements for advancing to the next era, you will be given a choice to either stay in the current one, or step into next one.
The decision will be floating above your palace until you accept it.
