Yes, I have running perfectly under Wine on my Xubuntu 11.10 box. I am at work ATM so I can't tell you what version of Wine I'm running at the moment. (either 1.4.x or 1.5.x) I did the following steps.

1. Opened a terminal and ran the command, "winetricks vcrun2008 d3dx9".

2. Downloaded the game from GOG and ran the installer like normal. I did a custom install and unchecked the option to install Foxit PDF Reader.

3. I altered the launcher that was generated on the desktop so it would launch with the following command, wine explorer /desktop=Torchlight,1440x900 "C:\Program Files\GOG.com\Torchlight\Torchlight.exe"

After that I just double-clicked the launcher on my desktop and it started right up in a 1440x900 window. Hope this helps you.

thanks for that. still haven't managed to get it working but you have pointed me in the right direction.
Just played for about half an hour without any issues or trickery. Simple install and run for me.

Running mint 12, 64-bit, KDE and wine 1.5

Winetricks is not being used on this prefix as far as I can remember (have another one for Legend of Grimrock that does.)

I am able to run it full screen and not in a window. Full screen is only 1024x768 at the moment.
Running Wine 1.4.1 off of Debian Unstable, and it works. I did make a separate directory for Wine install, and did "export WINEPREFIX=/bla/bla/baz". Ran winecfg to copy all of the stuff and set up the drives/document folders, and set wine to use virtual desktop. Did the aforementioned winetrick to install Visual C runtime and DirectX.

Works just fine. Kinda slow sometimes because my desktop machine only has half a gig of memory, but the GeForce absolutely blows away the puny Intel GMA on my netbook. =)
Wine 1.4.1 on Mac OS X works out of the box perfectly. I'm using the international retail version, so when I was asked whether to install DirectX I just said no.
It works for me with Wine 1.5.5 (Debian testing / KDE), though the additional update (1.0.1) provided by GOG produces errors with Wine and can't be applied, so I use the base version itself. And I had to install vcrun2008 as was noted above already.

Are you sure you can run any other games with Wine? You problems can be not Torchlight specific, but general configuration. For example make sure you have proper OpenGL support, audio and etc. On 64 bit systems for example you need 32 bit OpenGL drivers to be present, since Wine translates 32 bit DirectX API to 32 bit OpenGL and so on. If you manage to run other games but not torchlight, try running it from the terminal and see what errors are produced. (Post them here if you want some more ideas on what goes wrong).

It runs for me, but all of the 3d characters are white. No textures applied. Environment is fine, only happens with the characters and mobs.
A very easy way to install is to use PlayOnLinux (just google for it).
It has specific installer settings for the GOG Torchlight Version - also for a lot of other GOG Games.
So no need to manually install things like vcrun2008 etc., PlayOnLinux does that for you.
The Games are installed in different directories together with a virtual environment of the best Wine version etc.
So every Game can have another wine version...
Torchlight runs flawlessly with Wine 1.5.29 on a Debian Sid amd64.
No need to install anything via winetricks, just run the setup and enjoy the game!

There's a native Linux version, and it was once sold via Humble Indie Bundle, so watch out for a second opportunity, or wait till GOG adds Linux versions.
