I did a quick gogle search and managed to come up with this site that has the other Tour Guides for this game.

Wow! Thanks so much for finding these. I don't think I've ever played the game with all of the tour guides installed.

Someone should really contact Good Old Games about including these.

Which player do I need to watch these?

you don't need a player, just the game

1. buy and install the game from GOG
2. open the game directory, probably [C:\GOG Games\Titanic Adventure Out of Time\]
3. open the "TOUR" directory
4. download and extract the tour files inside the "TOUR" directory
5. start the game in tour mode
RESULT: all tours are showing up in the tour guide navigation

These should be included with an update to completely archive the game.
