I alreday own Witcher 3, and bought the GOTY because it came with the xpac/dlc's. I uninstalled my version of Witcher 3, and tried to install the GOTY edition, it just says updating for hours and hours i left it all night and nothing happend ive restarted and same problem it just says updating. How can i get this working?

What hardware do you have?
same boat for me but i was able to run the witcher3.exe so i can play but not through the gog launcher and i doubt anything in my rig would mess with it.

I don't think it's a hardware issue. Try verifying game files in Galaxy. Probably some files got a little screwed up. Did you try launching the game from a desktop shortcut? There's also always a possibility to play the game without the client. You need to manually find the .exe file in the game folder however (unless you install the game from offline installers).

If you experience these problems again, you should try downloading the offline installers. It might help.
