I keep finding vials everywhere. Other than disassembling them into glass I can't find any purpose to these.
At least empty bottles can be used to hold potions. But what about the vials?

They have no discernible purpose. Sell them.

Is there any use for the glass you get from dismantling them? I haven't found any recipes or diagrams that call for glass.

You mean the vials in the trash tab? Because everything in the trash tab is only useful for money or materials.

I believe that there is at least one alchemy item (Beast Oil, I think) which requires a bear hide, which is categorized into the Trash tab. That's all I can think of having seen so far though.
