I assume you mean Gremist, the alchemist on Ard Skellig? He will only play Gwent and trade with you after you have completed his personal quest. The quest is called 'Practicum in Advanced Alchemy'. You must complete that first.

Have you received the gwent quest 'Skellige Style" yet? Gremist won't play you until the proper place in this quest line.
