So will the physical collector's edition be limited to a certain amount? Or will it be produced as long as there's supposed to be demand for it? If I can't afford it before or shortly after release, will I still have the opportunity to buy a CE later?

Umm, All Collector's Edition are limited, That is what makes them worth Collecting. If you wait to buy it, you are risking not getting it without a pre-order, if it turns out to be popular. I really wished they had a mid tier collection, not really interested in the head,.
Actually the basic package is mid-tier, since it's not only called the "Premium Edition" it also has premium content - goodies anb bonuses (boni?) usually coming with mid-tier editions, as opposed to regular editions, which just feature the game. And GOG offers you even more goodies on top of THAT. They're awesome that way.

GOG is definitely great. There the Atlus of PC games. I am definitely getting the GOG version. Though if they had a mid tier retail package. with guide, artbook(I would just prefer them in paper without printing them myself). playing cards, dice, cards guide and coins with a price of $90 tops. I would buy that also. I just can't justify an extra $130 to myself when I really don't want some of the stuff.

Whick makes me living in Poland arealy happy camper, our CE will cost arround $90 ;-)

Actually, that varies from publisher to publisher. Some call their Collector's Editions that way only because they include a lot of collectable items, some also because they are limited. And some call the latter Limited Editions which is much clearer as the "limited" is included in the name already.

No they are still limited. Whether an CE or an LE. Publishers never reprint them. If the game is reprinted its never with all the original extras. So they are always limited to the 1st print run. Now, How many there are depends on the publisher, It could be a couple thousand or every launch copy.
