I've bought both The Witcher 2 on GOG as well as the collector's edition (I'm a collector), so I have yet another copy of The Witcher 2 I'd love to give away to a friend.

Is it at all possible for him to register the key somewhere and download the game, without me having to give him the physical disks?

No. You will have to give him the box.

The key is only used for activation (well, not anymore since securom is removed by patch 1.1) and for registration.
