I've only played for like an hour or two and I've crashed to desktop three times already. Anything I can do to fix this? I'm running Windows 7 64bit if that helps.

Try updating drivers (gpu especially).
And maybe compatibility mode.

I did both of those things and it's still crashing. :(

Have you noticed stuttering before the crashes? I crashed three times during act IV, which I cleared up after deleting 180 odd saves and restarting my comp...

...What is your build?
Actually, yeah I have noticed it stuttering. It will stutter and I think it's going to crash but it doesn't, but then it does crash a few seconds or a minute later anyway. I'm really early in the game so I only have a few saves, so that's not the problem.

Geforce GTS 250
4 gigs of ram
Intel i5
Windows 7 64bit

I also tried turning AA off, but that didn't help either.
I've got the steam version and it crashes all the time. In the 15 hrs I played so far it crashed approx. 50 times.

I got:
Win7 x32
C2D 2.66 Ghz
2 GB Ram
Gefore 9800gtx+

You see you are not the only one.
Well, I'm in Chapter 1 now and I'm still crashing every 15 minutes so the prologue wasn't the problem.

Try running the game via witcher.exe, rather than through the launcher. Make sure you run it as Administrator.

If the stuttering is frequent, you could try the suggestions in the 2nd last post of this thread
Only time I experienced that crashing frequency (every 20 minutes or so) with The Witcher it was due to faulty video drivers. Sometimes new drivers just break old games and you have to wait before Nvidia or ATI care about fixing the issue (not a new game; not a priority to them).

Try revert to an older driver in the meantime.
Running the game in windowed mode seems to have resolved my issue. Thanks!
i rebought the game on GOG now. Already had the steam version. This better doesn't crash now :|

EDIT: I shouldn't have trusted the user on the steam forums who said the GOG version crashed less. It crashes as often as the steam version. It's not any better. Madness! Wasted money :(

XP 32bit here and crashes randomly, like once for hour-two.
Just a reminder to everyone to try windowed mode. This seems to fix it for a lot of people.
