I just installed the game and just finished the Prologue. I've seen some bugfixing mods, but many say you should only install if you come across the bug. So I'm assuming I don't install those.

What must mods should I install?

I'm thinking of installing the wolf companion mod (just so the game doesn't feel so lonely) and the minimal hud. However I saw the Rise of the White Wolf Enhanced Edition mod, but not sure if it's too much a mod for my first playthrough or not.

I would not recommend Rise of the White Wolf for a first-timer. It's a solid mod and there's nothing wrong with it (at least there wasn't when I used it a couple of years ago), but it's simply not necessary.

I would stick to vanilla unless you have a specific problem or find some part of the game that's really bothering you so much you can't stand it.

You're right about the bug fixing mods. Most are only meant to be used if you encounter the bug. However, some should be installed from the start. There are three:

Han Gives Han NOT Berbercane
Missing Kalkstein and Leuvaarden Clues Fix
Celina Wreath Fix

UniversalWolf is right, Rise of the White Wolf is not for first time players. It overhauls the visuals completely in a very subjective way.

I would add some texture mods and SweetFX just play with better graphics. Check this guide and look for "Improving Game Stability", "Textures and Graphic Improvements" and "Graphics Final Touch - SweetFX"
